Servings 8 Good Sized Biscuits

Ingredients

  • 2-1/2 cups All Purpose Flour
  • 2 tbsp Baking Powder
  • 1 tsp Salt
  • 1/2 cup Unsalted Butter, but into small cubes Cut up and return to refrigerator to chill. I do this earlier in the day or night before.
  • 1 cup Buttermilk
  • 1 tbsp Honey (optional)

Instructions

  • Preheat oven to 425
  • Mix flour, baking powder and salt together. I use my KitchenAid mixer.
  • Add cubed butter and mix until mixture is all course crumbs.
  • Add buttermilk and honey and mix until dough forms.
  • Turn dough out onto floured surface and and knead a few times until flour absorbs and stickiness dissapates.
  • Roll out with rolling pin to 1/2 thick, then fold in half, roll out again, fold in half again, and roll out again.
  • Using a round biscuit cutter, cut out biscuits and place on prepared baking sheet. I use a Silpad or parchment sheet.
  • If you like, brush the tops with buttermilk.
  • Bake for about 18 minutes. Start watching after 15 minutes to ensure they don't get overly browned.
  • Serve warm with butter and honey, or jam.
