Banana Streusel Muffins

Have ripe bananas sitting on your counter?! Make banana muffins. Better yet, banana streusel muffins. Streusel is optional. Either way, the very best banana muffin recipe!

Ingredients
  

  • 3/4 cup All-purpose flour
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 tsp Ground cinnamon
  • 1/8 tsp Nutmeg
  • 2 Ripe bananas, mashed
  • 3 Tbsp Unsalted butter, melted
  • 1/2 cup Brown sugar
  • 1 large Egg
  • 1/2 tsp Vanilla Extract
  • 1 Tbsp Milk
  • Optional: raisins or nuts

Streusel Topping

  • 1/4 cup All-purpose flour
  • 1/4 cup Brown sugar
  • pinch Salt
  • 2 Tbsp Unsalted butter, very cold and cut into small pieces

Instructions
 

  • Preheat oven to 425. Prepare muffin tin (grease, use non-stick spray or muffin cup liners)
  • Combine flour, baking powder & soda, salt, cinnamon, and nutmeg together in a bowl.
  • In a mixer (or large bowl), combine mashed bananas, melted butter, brown sugar, egg, vanilla and milk.
  • Add dry ingredients to wet ingredients and mix until combined.
  • Add raisins or nuts, if desired, and fold into batter.
  • Using an ice cream scoop, add batter to cupcake liners.
  • Add streusel topping to each muffin (topping instructions below).
  • Bake 5 minutes at 425, then lower heat to 350 for another 15 minutes.
  • Cool in the pan for 5-10 mites then transfer to wire rack.

Streusel Topping

  • Combine flour, brown sugar and salt in medium sized bowl.
  • Add butter and cut in to form course crumb-like mixture. You can use a pastry cutter, two knives, or a fork.
  • Sprinkle over tops of each muffin before baking.
