The Party's Over Vegetable Soup

Equipment

  • Dutch Oven or large soup pot

Ingredients
  

  • 1 tbsp Extra Virgin Olive Oil
  • 1 Yellow Onion Diced
  • 2 Carrots Diced
  • 2 Celery Stalks Diced
  • 2 cloves Garlic Diced
  • 1 Red Bell Pepper Diced
  • 1 Zucchini Diced
  • 1 Small Head of Broccoli Finely chopped
  • 1 14.5oz can Fire Roasted Petite Diced Tomatoes
  • 32oz Low Sodium Chicken Broth
  • 1-3 tsp Italian Seasoning
  • 1 Parmesean Rind
  • Salt
  • Pepper
  • 1 cup Fresh or Frozen Corn

Instructions
 

  • Heat oil in Dutch oven or large soup pot over medium heat
  • Add onion, carrots and celery and cook until onions are translucent
  • Add garlic, red pepper, zucchini and broccoli and continue to cook on medium heat for another 5-10 minutes
  • Season salt and pepper
  • Add tomatoes, chicken broth, Italian seasoning and Parmesan rind
  • Bring to a boil, reduce heat, cover and simmer for 30 minutes
  • Add corn and season to taste
