The Party's Over Vegetable Soup
Healthy, yummy veggie soup.

- 1 tbsp Extra Virgin Olive Oil
- 1 Yellow Onion Diced
- 2 Carrots Diced
- 2 Celery Stalks Diced
- 2 cloves Garlic Diced
- 1 Red Bell Pepper Diced
- 1 Zucchini Diced
- 1 Small Head of Broccoli Finely chopped
- 1 14.5oz can Fire Roasted Petite Diced Tomatoes
- 32oz Low Sodium Chicken Broth
- 1-3 tsp Italian Seasoning
- 1 Parmesean Rind
- Salt
- Pepper
- 1 cup Fresh or Frozen Corn
Heat oil in Dutch oven or large soup pot over medium heat
Add onion, carrots and celery and cook until onions are translucent
Add garlic, red pepper, zucchini and broccoli and continue to cook on medium heat for another 5-10 minutes
Season salt and pepper
Add tomatoes, chicken broth, Italian seasoning and Parmesan rind
Bring to a boil, reduce heat, cover and simmer for 30 minutes
Add corn and season to taste
