Preheat oven to 400
Grease large baking dish or spray with cooking spray
Chop one peeled apple + one onion and place in bottom of dish
Prepare stuffing according to package directions adding frozen corn along with dry stuffing mix
Season both sides of pork chops with salt, rosemary and thyme
In large saute pan, heat olive oil over medium heat
Brown pork chops for a few minutes on each side
Place browned pork on top of apple and onion slices in baking dish
Place stuffing around pork chops
Cover dish with foil and bake for 25 minutes
Remove foil and continue baking for 10-15 minutes, until internal temperature of pork reaches 145 degrees
Garnish with fresh thyme and serve
