Baked Pork Chops & Stuffing

Ingredients
  

  • 1 Apple, chopped
  • 1 Yellow onion, chopped
  • 1 tbsp Extra virgin olive oil
  • 4 Thick-cut boneless pork chops
  • 2 tsp Fresh chopped rosemary
  • 2 tsp Fresh chopped thyme + more for garnish
  • Salt & pepper to taste
  • 6 oz box Stove Top stuffing mix + butter & water per instructions
  • 1 cup Sweet white corn (frozen is fine)

Instructions
 

  • Preheat oven to 400
  • Grease large baking dish or spray with cooking spray
  • Chop one peeled apple + one onion and place in bottom of dish
  • Prepare stuffing according to package directions adding frozen corn along with dry stuffing mix
  • Season both sides of pork chops with salt, rosemary and thyme
  • In large saute pan, heat olive oil over medium heat
  • Brown pork chops for a few minutes on each side
  • Place browned pork on top of apple and onion slices in baking dish
  • Place stuffing around pork chops
  • Cover dish with foil and bake for 25 minutes
  • Remove foil and continue baking for 10-15 minutes, until internal temperature of pork reaches 145 degrees
  • Garnish with fresh thyme and serve
