Warm summer nights call for light, refreshing, and pretty cocktails. Today I’m making Grapefruit Aperol Spritz from EatingWell. Fresh squeezed grapefruit juice adds a bright twist to the classic Aperol Spritz, a favorite Italian aperitivo. It’s going to be good.
August is cocktail month at Snowberry.
Last week we kicked things off with a Rose Hibiscus Spritz.
And this week it’s Grapefruit Aperol Spritz!
A variation of a classic Aperol Spritz.
Made with Aperol, Prosecco, and fresh squeezed grapefruit juice.
(I jump at any chance to eat … or drink … grapefruit.
And I prefer the red or pink variety … sweet, tart and a just a tad bitter.)
And topped off with Club Soda.

I found this recipe on Eating Well … and its a new favorite.
First of all I love anything grapefruit.
I also appreciate Aperol.
It brings orange citrus flavor to the party without being overly sweet.
And let’s not overlook the rich color.
Fabulous.
Here’s what to do …
Grapefruit Aperol Spritz
2 oz Aperol
2 oz Prosecco
1 oz Club Soda
1 oz fresh squeezed grapefruit juice
(Try to find ruby red grapefruit, it’s sweeter & tangy)
Grapefruit wedge & fresh thyme sprig for garnish.
Gather all the above ingredients.
Fill two wine glasses with ice.
(I like to chill the glasses too.)
Add Aperol.
Then add the Prosecco.
Top with Club Soda.
And garnish with a grapefruit wedge & thyme sprig.
Jim doesn’t appreciate herb garnishes.
He gets overly dramatic and says …
‘Please remove the tree branch from my drink.’
Eyeroll.
So there you have it … Grapefruit Aperol Spritz!

Ingredients
- 2 oz Aperol
- 2 oz Prosecco
- 1 oz Club Soda
- 1 oz Fresh Squeezed Red Grapefruit Juice
- Grapefruit wedge & Thyme sprig for garnish
Instructions
- Fill glass with ice and add Aperol and Prosecco.
- Top with Club Soda and grapefruit juice.
- Garnish with grapefruit wedge and thyme sprig.
